Caramel filled apple cupcakes with not quite marshmallow and not quite swiss meringue buttercream



I had every intention again of entering the Caramel Cupcake Hero event. But I wasn't too sure, well, that satisfied with the texture of the cupcake. Would have to work on it. Other than that I do like the addition of dried apple with the grated apple. And the dulce de leche, mmmmm.




The frosting was a big fail. I wanted to make a caramel marshmallow but it collapsed so I thought I would be able to salvage it by turning it into a swiss meringue buttercream which also didn't quite work.
