What can I say about this combination of flavours?
This cupcake is like an aromatherapy session at the beauty salon. The apple and lavender are just asking to be massaged into your skin. Combined with the pistachio in the cupcake and the lavender infused whipped white chocolate ganache, it is a like a two hour visit to a day spa.
People really did love this flavour combination. And if you wanted something sophisticated for your wedding, I highly recommend this cupcake. Especially combined with the lavender infused whipped white chocolate ganache, as I paired it with today.
Apple Lavender and Pistachio Cupcakes
2 apples, grated
1 ¾ cup all-purpose flour
1/3 cup pistachios, crushed
1/2 cup brown sugar
1/2 tsp cinnamon
1 tsp lavender flowers
2 tbs honey
1 tsp baking soda
1/4 tsp salt
2 eggs
1/2 cup oil
1/4 cup apple juice
1. Tear the lavender flowers off stem. Combine the lavender flowers and honey in a bowl. Heat in microwave for 30 seconds. Allow to cool.
2. Preheat oven to 180 (350). Line muffin tray with cupcake liners.
3. Combine flour, sugar, cinnamon, baking soda, pistachio and salt in bowl and whisk to combine.
4. Crack the eggs into a separate bowl and lightly whisk.
5. Add the oil, apple juice, and honey to eggs and mix to combine.
6. Combine the wet and dry ingredients until all ingredients come together.
7. Add the grated apple and fold through batter.
8. Divide the batter evenly into cupcake papers, about 3/4 full.
9. Bake for 20-22 minutes, or until a toothpick comes out clean.

Yum, yum, yum, yum, yum! YUM! These sound like they'll smell as good as they taste! I've (ashamedly) never cooked with lavender before. Do you just use the raw petals???

Priscila the ganache recipe is really simple.
Add 2 fresh lavender flowers to half a cup of cream. Leave for 30 minutes in the fridge. Bring cream to a boil, strain flowers from the cream and add to 250 grams of white chocolate, chopped.
Stir until the chocolate has melted. Leave to cool a little then put in the fridge until ganache has thickened.
Whip the ganache with beater for 5 minutes. Pipe.
