Here is the other recipe that I am submitting.
Strawberry Daiquiri Cupcake
60g / 2 oz butter
75g / 2.5 oz cream cheese
1 cup sugar
1 tsp lime zest
1 3/4 cup self raising flour
2 eggs
1/2 cup strawberry puree
1/4 cup Bicardi soaked strawberries finely diced
1. Preheat oven 180 (350).
2. Line a 12 capacity muffin tray with cupcake liners.
3. Cream butter, cream cheese, sugar and lime zest until light and fluffy, about 3 minutes on medium speed.
4. Add eggs, one at a time. Beating well after each addition, about 30 seconds on medium speed.
5. Alternately fold in flour and strawberry puree in lots of 3, starting and ending with flour. All ingredients should be well combined.
6. Fold in diced strawberry.
7. Evenly divide batter into cupcake liners.
8. Bake for 20 - 25 minutes or until a toothpick comes out clean.
9. Allow cupcakes to cool completely before icing.
Strawberry Daiquiri Cream Cheese Buttercream
60g / 2 oz butter
125g / 4 oz cream cheese
3 tbs strawberry puree
2 tbs Bicardi
1 tsp lime zest
2 cups icing sugar
1. Cream butter, lime zest and cream cheese until light and fluffy.
2. Add strawberry puree and Bicardi. Gradually add 1 cup of icing sugar and beat to combine.
3. Continue to add remainder of icing sugar while beating on medium speed.
4. Add more icing sugar if required to get icing to fluffy but stiff consistency.

Very interesting recipe and like it's seems to me ,easy to bake. I'll try it but what is it Bicardi?. It's like the Bacardi rom?
Bicardi is a white or clear rum, yes.
I'm so making daiquiris now... and then these cupcakes, they look fabulous!
Mine came out quite dense.
i think the strawberry puree weighs the cupcakes down a bit?? but who cares? it tastes sooo good!!
